It’s been a pretty good food week for me. I’m on the go today and haven’t had the chance to do my food collage, but I still want to give a quick update. I’m down an additional 1.5 pounds and feel good about my small and steady pace.
Food Faves:
That’s easy – my Eggplant & Tomato Stackers. YUM! One of my food goals was to create a new recipe. While I didn’t create this one it is a brand new dish for me – and it was a big hit with Husband. I found the recipe on Pinterest of course. Since I didn’t make it up I’m sending you back to the original source, Maza’s Grilled Eggplant with Tomato and Feta. I did put my own spin on it – I pan fried the eggplant instead of grilling it for convenience, I used Greek Feta, and I used two eggplants instead of one.
The fresh basil and garlic made my house smell delicious!
This was it before I popped them in the oven. Really easy.
And this was it after. I tossed some shrimp with fresh garlic, basil and olive oil to go with it.
Food Fails:
My biggest food challenge has been overeating at night. If I don’t plan my food out correctly and have enough during the day it definitely catches up with me at night – and that’s the worst time.
Next Week’s Goals:
To make sure I’m eating enough during the day; continue with no starchy carbs after 6 p.m; and find another healthy new recipe.
Husband is on board with the healthy eating so that’s been a big help. In fact, he’s been limiting his starchy carbs, flirting with going Paleo, and looking at more gluten free options. I’ve been looking through the Udi’s Gluten Free Living Community conversations and Pinterest boards for more great tips and recipes. I love having so many great resources at my fingertips.
